The cuisine of any nation is unique and is based on centuries-old traditions and foundations. The uniqueness of Caucasian cuisine is due to the following factors:

1. More than 100 peoples, ethnic groups and nationalities live in a relatively small territory of the Caucasus, which have their own original recipes
2. Dishes are based on the use of various products, and, most importantly, on various spices and seasonings.
3. The combination of the same products has different interpretations, even among peoples living in the immediate neighborhood.
4. For many centuries, Caucasian cuisine has absorbed the traditions of the cuisines of other countries, with which, one way or another, the peoples of the Caucasus intersected. It was this factor that laid the foundation for mixing Caucasian cuisine with Russian and European.
